The 1950s Paharganj shop that serves arguably Delhi's definitive chole bhature - fluffy paneer-flecked bhature with chickpeas simmered overnight, finished with pickled carrots and banta soda. One dish, done since Partition, still under a hundred rupees.

Go before 11am; by noon the bhature lose the breakfast-crowd freshness that makes them transcendent.
